In this interview, Back shares his vision for Salt & The Cellar and why Orlando’s dining scene is one to watch.

Orlando’s dining scene has been growing rapidly and attracting more national attention. What excites you most about being part of this moment in the city’s culinary evolution?

Orlando’s dining scene is experiencing a remarkable evolution, becoming more diverse, global, and innovative with each passing year. What’s most exciting is that the city is no longer just a destination for world-famous attractions—people are now coming specifically for the food. Orlando is emerging as a true culinary destination in its own right.

Michelin’s arrival in Orlando has been a major milestone for the restaurant community. How do you feel it has changed the dining culture here, and what does that recognition mean for chefs and restaurants in the city?

Orlando has historically been stereotyped as a city of theme parks and chain restaurants, but that image is quickly becoming outdated. The arrival of the Michelin Guide in Orlando is proof that the city now stands on a level playing field with major global food capitals.

Salt & The Cellar is your first restaurant in Orlando. How does this concept reflect your vision as a chef, and in what ways does it stand apart from your restaurants in other cities?

What sets Orlando apart from other cities is its incredible cultural diversity—and at Salt & The Cellar, we’ve embraced that spirit in our menu. You’ll find influences from Japanese, American, Mediterranean, and globally inspired cuisines, all thoughtfully blended to create something uniquely our own. Our cocktail offerings are equally distinctive, offering a luxurious blend of globally sourced spirits and presentations that push creative boundaries.

For diners who have never experienced Salt & The Cellar, what do you hope they take away from their first visit?

It is my hope that guests take away just how much attention to detail has gone into every aspect of Salt & The Cellar. From the design, layout, and carefully chosen materials to the personalized service and globally inspired cuisine, it’s a one-of-a-kind experience in Orlando. From the moment you step through the ette property doors, you’re immersed in a luxurious atmosphere that engages all the senses.”

You’ve opened restaurants in some of the world’s most dynamic dining destinations. How do you see Orlando stacking up against other food-forward cities where you’ve worked?

Orlando is in the midst of experiencing a culinary identity shift. It’s a city where Michelin-starred prestige meets theme-park glamour and a thriving local food culture. What makes it truly unique is that you can experience it both as a dedicated foodie and as a family.

With Michelin stars under your belt and a global portfolio, what continues to motivate and inspire you in the kitchen?

My passion is to share my food—an expression of my life experiences—with as many people around the world as possible. I love meeting guests from different cities and countries, and discovering how cuisine and dining are the common threads that connect us all. Food has a special ability to bring friends and families together, and being a part of those shared moments is something I’m incredibly proud of.

Looking ahead, what’s next for you—either here in Orlando or elsewhere? Are there new concepts, collaborations, or cities you’re excited to explore?

My next restaurant is opening in Hong Kong, followed by another exciting project in Montana at the very first One&Only Resort in the United States. Each location allows me to bring my culinary vision to new audiences in completely different settings.

You’re spending time here at ette hotel while visiting Orlando. How has your stay been, and what has stood out to you about the property? Ette is one of my favorite hotels to visit.
